This vegan falafel recipe is packed with flavor and perfect for Meatless Monday. It's gluten-free and bursting with fresh herbs and spices.
Ingredients:
- 2 cups cooked chickpeas
- 1 small onion, chopped
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh cilantro, chopped
- 2 tablespoons chickpea flour
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon baking powder
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions:
Put chickpeas, onion, garlic, parsley, cilantro, cumin, coriander, baking powder, salt, and pepper in a food processor
By pulses, you can make the mixture well mixed but still a little chunky
Make small balls out of the mixture and then flatten them a bit to make patties
Set a pan on medium heat and add the olive oil
The falafel patties should be cooked for three to four minutes on each side, or until they are golden brown and crispy
You can eat falafel hot with your favorite vegan tahini sauce or in a pita with pickles, lettuce, tomato, and onions
