Ingredients:
- 3 ripe bananas, mashed
- 1/2 cup plant-based milk
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts optional
Instructions:
Preheat oven to 350F 175C
Grease and flour a 9x13 inch cake pan
In a large mixing bowl, combine mashed bananas, plant-based milk, maple syrup, coconut oil, and vanilla extract
In another bowl, sift together flour, baking powder, baking soda, and salt
Gradually add dry ingredients to wet ingredients, mixing until well combined
Fold in chopped walnuts, if using
Pour batter into prepared cake pan and smooth the top with a spatula
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean
