Ingredients:
- 8 oz pasta
- 1 lb Italian sausage
- 1 bunch kale, stems removed and chopped
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Red pepper flakes optional, for heat
- 2 tablespoons olive oil
Instructions:
Cook pasta according to package instructions until al dente
Drain and set aside
In a large skillet, heat olive oil over medium-high heat
Add sausage and cook until browned, breaking it apart with a spoon as it cooks
Add minced garlic to the skillet and cook for 1-2 minutes until fragrant
Stir in chopped kale and cook until wilted, about 3-4 minutes
Reduce heat to low and pour in heavy cream
Simmer gently for 2-3 minutes
Add cooked pasta to the skillet, tossing to coat evenly with the creamy sausage and kale mixture
Sprinkle grated Parmesan cheese over the pasta and toss again until the cheese is melted and the sauce is creamy
Season with salt, pepper, and red pepper flakes if desired
Serve hot, garnished with additional Parmesan cheese and fresh herbs if desired
