Ingredients:
- 1 whole chicken about 4-5 pounds
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 lemon, sliced
- 4 cloves garlic, crushed
- Fresh herbs rosemary, thyme, or parsley, for garnish optional
Instructions:
Preheat the oven to 425F 220C
Remove giblets from the chicken cavity and pat the chicken dry with paper towels
In a small bowl, mix together olive oil, salt, pepper, paprika, garlic powder, and onion powder to make a seasoning rub
Rub the seasoning mixture all over the chicken, including under the skin and inside the cavity
Stuff the cavity with lemon slices and crushed garlic cloves
Place the chicken breast-side up on a roasting pan or baking dish
Roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165F 75C and the skin is golden brown and crispy
Once done, remove the chicken from the oven and let it rest for 10 minutes before carving
Garnish with fresh herbs if desired before serving
