Ingredients:
- 2 tablespoons olive oil
- 1 onion, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 green bell pepper, thinly sliced
- 2 cloves garlic, minced
- 4 large eggs
- Salt and pepper to taste
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper optional
- 2 tomatoes, diced
- 2 tablespoons fresh parsley, chopped
- 1/4 cup grated cheese optional
Instructions:
Heat olive oil in a large skillet over medium heat
Add the sliced onions and saut for 2-3 minutes until they begin to soften
Add the red and green bell peppers and continue to saut for another 5-7 minutes until they are tender and slightly caramelized
Stir in the minced garlic, paprika, and cayenne pepper if using
Cook for an additional 1 minute
Add the diced tomatoes and cook for another 5 minutes until they break down and create a sauce
Create 4 wells in the mixture and crack one egg into each well
Season the eggs with salt and pepper
Cover the skillet and cook for 5-7 minutes, or until the egg whites are set but the yolks are still runny, or to your desired level of doneness
Sprinkle with chopped fresh parsley and grated cheese if using
Serve hot, directly from the skillet
